Ingredients:

Fresh mackerel, cleaned and fried 1 whole fish
For the Sauce:
Garlic cloves, minced 2 cloves
Large chili, sliced 1 piece
Bird’s eye chilies, chopped (optional) 5 pieces
Sweet soy sauce 1 tbsp
Chicken or beef stock powder ½ tbsp
Fish sauce 1 tbsp
White pepper ⅓ tbsp
Cooking oil 2 tbsp
Water as needed

Steps:

  1. Prepare the Mackerel: Fry the cleaned mackerel until golden and crispy. Once fully cooked, remove from the oil and drain on a paper towel to remove excess oil.

  2. Sauté the Aromatics: Heat 2 tablespoons of oil in a pan over medium heat. Sauté the minced garlic, sliced large chili, and chopped bird’s eye chilies (if using) until fragrant and slightly wilted. Add a small splash of water to prevent sticking and help soften the chilies.

  3. Make the Sauce: Add the sweet soy sauce, fish sauce, chicken or beef stock powder, and white pepper into the pan. Stir the sauce well and allow it to simmer for a minute, letting the flavors combine.

  4. Combine with the Mackerel: Gently place the fried mackerel into the pan, making sure to coat it evenly with the sauce. Cook for a few minutes, turning the fish occasionally to ensure the sauce seeps into the flesh.

  5. Serve: Once the mackerel has absorbed the rich, spicy, and sweet soy sauce, remove it from the heat. Transfer to a serving plate and enjoy immediately with steamed rice.
