Fried mushrooms are the perfect crispy, savory treat for any meal or as a flavorful appetizer. Combining the earthy richness of oyster, porcini, and champignon mushrooms, each bite is an explosion of textures and flavors. The light and crispy batter encasing the tender mushrooms makes this dish irresistible, while the subtle addition of breadcrumbs provides that golden crunch that everyone loves. Here’s how to make these delightful crispy mushrooms step by step.

Ingredients:

Ingredient Quantity
Oyster (Pleurotus) Mushrooms 220g
Porcini Mushrooms 220g
Champignon Mushrooms 250g
Breadcrumbs 150g
All-Purpose Flour 150g
Water 190g
Salt (to taste) q.b.
Peanut Oil (for frying) 1L

Preparation:

Step 1: Cleaning the Mushrooms
Start by carefully cleaning the mushrooms. Avoid rinsing them under water as they can absorb moisture, which may affect the frying process.

  • For the oyster mushrooms, gently wipe the surface with a damp cloth to remove any dirt. Then, use a small knife to trim off the base of the cluster.
  • For the champignon mushrooms, simply wipe away any soil using a damp cloth and trim off the bottom of the stem.
  • For the porcini mushrooms, use a smooth-edged knife to delicately scrape the stem to remove any dirt. Then, finish by wiping off any remaining soil with a cotton cloth.

Step 2: Preparing the Batter
In a medium bowl, combine the all-purpose flour and water. Stir to create a smooth batter with a consistency that will coat the mushrooms evenly.
In another bowl, pour the breadcrumbs, which will be used to coat the mushrooms after they are dipped in the batter.

Step 3: Heating the Oil
In a deep pan or pot, heat the peanut oil over medium heat. You’ll want the oil to reach a temperature of about 170°C (338°F) for optimal frying.

Step 4: Dipping and Frying the Mushrooms
For each type of mushroom:

  1. Using kitchen tongs, dip one mushroom at a time into the batter. Be sure to coat it fully, then allow any excess batter to drip off.
  2. Next, dip the battered mushroom into the breadcrumbs, ensuring an even coat of breadcrumbs.
  3. Carefully place the coated mushroom into the hot oil. Fry for about 3 minutes, or until golden and crispy on all sides.
  4. Repeat the same process with the champignon and porcini mushrooms. Fry each type until perfectly golden and crispy.

Step 5: Draining and Serving
Once fried, use a slotted spoon to remove the mushrooms from the oil and place them on a plate lined with paper towels to drain any excess oil.
Season with a pinch of salt to taste while they are still hot and crispy.

Step 6: Enjoy!
Serve these crispy fried mushrooms as a side dish to your favorite main course or enjoy them on their own as a delectable snack. They pair perfectly with a tangy dipping sauce like ranch or garlic aioli.
