Clean the Sardines:
Start by cleaning the sardines. Gently press on the head with your fingers to easily detach it from the body, along with the innards. Once the head and innards are removed, carefully open the sardines like a book to remove the bones. Afterward, rinse the sardines under cold water and place them on a paper towel to dry them thoroughly. -
Prepare the Filling:
Finely chop the garlic, parsley, and capers. Then, stuff half of the sardines with this mixture. Pair the stuffed sardines with the remaining sardines to create pairs. The number of pairs will depend on the size of your sardines. -
Prepare the Breading Station:
Crack the eggs into a shallow bowl and lightly season them with salt. Whisk them together using a fork. In another shallow bowl, place the breadcrumbs. -
Coat the Sardines:
Take each sardine pair and first dip them into the beaten egg, ensuring they are fully coated. Then, dredge them in the breadcrumbs, pressing gently so the breadcrumbs adhere well to the fish. -
Fry the Sardines:
Heat the peanut oil in a large frying pan. Once the oil is hot, carefully fry the sardines until they are golden and crispy on both sides. Be sure not to overcrowd the pan to allow for even frying. -
Prepare the Garnish:
While the sardines are frying, slice the lemon into thin wedges. Chop some fresh parsley for garnish. -
Serve:
Once fried, remove the sardines from the pan and place them on a paper towel to drain excess oil. Arrange them on a serving plate, garnished with lemon slices and chopped parsley. Serve hot, and enjoy!
