Egg 1
All-purpose seasoning flour As needed
Shallots 4 cloves
Red chili peppers 4
Tomato 1 (medium-sized)
Sugar To taste
Cooking oil For sautéing and frying

Instructions:

  1. Drain the Sardines: Begin by carefully draining the sardines from their sauce. Set the sauce aside for later use.

  2. Prepare the Egg and Flour Coating: Beat the egg in a bowl. Dip each sardine into the beaten egg, ensuring they are fully coated. Next, dredge the sardines in the all-purpose seasoning flour, coating them evenly.

  3. Fry the Sardines: Heat a generous amount of cooking oil in a frying pan over medium heat. Once hot, fry the sardines until they turn golden brown and crispy. Remove from the oil and set aside to drain on a paper towel.

  4. Sauté the Aromatics: In a separate pan, heat a small amount of oil over medium heat. Sauté the sliced shallots, red chili peppers, and diced tomato until fragrant and softened.

  5. Add the Sardine Sauce: Pour the reserved sardine sauce into the pan with the aromatics. Stir well and let the mixture cook until it bubbles and thickens slightly, about 3-5 minutes.

  6. Assemble the Dish: Once the sauce is ready, drizzle it generously over the crispy fried sardines.
