Special Fried Tempe and Tofu (Tempe dan Tahu Goreng Spesial)

Ingredients:

For the broth (to cook the tempe and tofu) Quantity
Fresh ginger, peeled and sliced 1/2 finger-length piece
Garlic cloves, peeled and smashed 2 cloves
Salt To taste
Sugar 3 teaspoons
Bay leaves 2 leaves
For frying Quantity
Fried chicken flour (Sajiku brand) As needed
Fresh celery leaves, finely chopped As needed
Water As needed
Vegetable oil for frying As needed
Tempe (fermented soybeans, 1 block) 1 block (approx. 2000 IDR)
Tofu (cut into small cubes) 5 small pieces

Instructions:

  1. Prepare the Broth:

    • Start by boiling the tempe and tofu in a pot with water. Add the ginger, garlic, salt, and sugar to the water. Stir everything together.
    • Drop in the bay leaves and let the mixture simmer until the water reduces a little, and the flavors have melded together. If you prefer less sweetness, you can reduce the sugar amount.
  2. Prepare the Coating:

    • In a separate bowl, combine the fried chicken flour (Sajiku) with a handful of finely chopped celery leaves. Gradually add water to create a batter. Make sure it’s not too runny nor too thick – a medium consistency is best for coating.
  3. Fry the Tempe and Tofu:

    • Heat oil in a deep frying pan over medium heat.
    • Coat each piece of tempe and tofu in the flour mixture, making sure each piece is evenly coated.
    • Carefully drop the coated pieces into the hot oil and fry until golden brown and crispy.
    • Once done, remove them from the oil and drain any excess oil on paper towels.
  4. Serve and Enjoy:

    • Arrange the fried tempe and tofu on a serving platter. Serve warm as a delightful snack or as part of a meal.
