Tahu Petis: Fried Tofu with Sweet Shrimp Paste Dip

Ingredients:

Ingredient Quantity
Tofu (firm) 4 blocks
Ground turmeric 1 tsp
Ground coriander 1 tsp
Garlic cloves 3, minced
Salt 1 tsp
Petis (sweet shrimp paste) 3 tbsp
Hot water As needed
Fresh bird’s eye chilies As desired

Steps:

  1. Prepare the Spice Marinade
    In a small bowl, combine ground coriander, ground turmeric, minced garlic, and salt. Add a little water to form a smooth paste.

  2. Marinate the Tofu
    Cut the tofu into bite-sized pieces and place them in a shallow dish. Pour the spice marinade over the tofu, ensuring each piece is well coated. Let the tofu marinate for about 15 minutes, allowing the flavors to penetrate.

  3. Fry the Tofu
    Heat oil in a deep pan or wok over medium-high heat. Once hot, carefully add the marinated tofu and fry until golden brown and crispy. The level of crispiness can be adjusted to your preference.

  4. Prepare the Petis Dip
    While the tofu is frying, prepare the petis dip. In a small bowl, combine the shrimp paste with a little hot water to thin it out if it’s too thick. Stir until smooth and well blended. Taste the dip and adjust the consistency if needed.

  5. Serve
    Serve the fried tofu hot with the petis dip on the side. Don’t forget to include a side of fresh bird’s eye chilies for those who enjoy a bit of spice.
