Instructions:

  1. Prepare the Batter:

    • In a bowl, mix together the cornflour and all-purpose flour. Add a pinch of ground cinnamon to give the batter a warm, aromatic flavor. Gradually pour in the whole milk and whisk the mixture until smooth.
    • Cover the bowl and refrigerate the batter for about 2 hours to let it rest and thicken.
  2. Prepare the Fruits:

    • Peel and slice the pineapple into rings about 1.5 cm thick. Using a 3 cm diameter round cutter, remove the tough core from the center of each slice, then cut the rings into halves, followed by wedges approximately 3 cm in size.
    • Peel the bananas and slice them into rounds.
    • Peel the papaya, remove the seeds, and cut it into small chunks.
    • Wash the strawberries, remove the green tops, and pat them dry.
  3. Assemble the Skewers:

    • On each skewer, thread a piece of pineapple, a strawberry, a papaya chunk, and a slice of banana. Continue layering the fruit in this order until the skewer is full, repeating with more skewers until all the fruit is used.
  4. Fry the Skewers:

    • Heat sunflower oil in a frying pan or deep fryer until it reaches 150ยฐC (use a thermometer to check the temperature). The oil should be hot but not smoking.
    • Dip each fruit skewer into the chilled batter, coating it evenly. Carefully lower each skewer into the hot oil.
    • Fry the skewers for about 3-4 minutes, turning them occasionally, until the batter is golden and crispy.
  5. Drain and Serve:

    • Once fried, remove the skewers from the oil using a slotted spoon and place them on a plate lined with paper towels to absorb any excess oil.
