Galangal Fried Chicken (Ayam Goreng Lengkuas) Recipe
Ingredients:
- 7 chicken wings
- 5 shallots, peeled
- 3 garlic cloves, peeled
- 3 cm turmeric, peeled
- 1 teaspoon coriander seeds
- 2 young galangals, grated
- Bay leaves, kaffir lime leaves, and lemongrass stalks (to taste)
- Salt and seasoning to taste
- 2 cups water

Prepare the Spice Paste: In a food processor or mortar and pestle, finely grind the shallots, garlic, turmeric, and coriander seeds until smooth. This mixture will form the base of your spice paste.

Marinate the Chicken: Place the chicken wings in a large mixing bowl. Rub the spice paste all over the chicken wings, ensuring they are well-coated. Add the grated galangal to the chicken and mix thoroughly. Allow the chicken to marinate for 10 minutes.
