Crispy Chicken Katsu Recipe

Ingredients:

  • 500 grams (1/2 kg) boneless chicken thighs or breasts, filleted
  • 2 cloves garlic, grated
  • Salt, to taste
  • Black pepper, to taste
  • Seasoning powder (optional), to taste
  • Vegetable oil, for frying
  • For Coating:
    • All-purpose flour, as needed
    • 1 large egg, beaten
    • Panko breadcrumbs, as needed

Instructions:

  1. Prepare the Chicken:
    Start by washing the chicken fillets thoroughly. Use a meat mallet or rolling pin to gently pound the fillets to an even thickness. This will help ensure they cook evenly and remain tender.

  2. Season the Chicken:
    In a mixing bowl, combine the grated garlic, salt, black pepper, and seasoning powder if using. Rub this mixture all over the chicken fillets, making sure they are well-coated. For the best flavor, let the seasoned chicken marinate for at least 30 minutes. If time allows, marinate it overnight in the refrigerator for the flavors to meld thoroughly.

  3. Prepare the Breading Station:
    Set up a breading station with three shallow dishes:

    • The first dish should contain all-purpose flour.
    • The second dish should contain the beaten egg.
    • The third dish should contain panko breadcrumbs.
  4. Bread the Chicken:
    Take each marinated chicken fillet and coat it in the flour, shaking off any excess. Next, dip it into the beaten egg, allowing any excess to drip off. Finally, coat the fillet in panko breadcrumbs, pressing down gently to ensure the breadcrumbs adhere well. Set the breaded chicken aside for a few minutes to allow the coating to set.

  5. Fry the Chicken:
    Heat vegetable oil in a large skillet or frying pan over medium-high heat. Once the oil is hot, carefully add the breaded chicken fillets. Fry them until golden brown and crispy, about 4-5 minutes per side, depending on thickness. Ensure the chicken is cooked through and reaches an internal temperature of 75°C (165°F).

  6. Drain and Serve:
    Remove the fried chicken from the skillet and place it on a plate lined with paper towels to drain any excess oil. Serve immediately for the crispiest texture.
