  • 1 packet chicken bouillon (optional)
  • Oil, for frying

Instructions:

  1. Prepare the Chicken Skins: Begin by cleaning the chicken skins thoroughly, removing any small feathers that may still be attached. Rinse the skins under cold water and then squeeze the juice of one lime over them to eliminate any unpleasant odors. Rinse again and drain well.

  2. Season the Skins: In a mortar and pestle or a small food processor, grind the garlic, salt, and black pepper together until a fine paste forms. Rub this mixture evenly over the chicken skins, making sure each piece is well coated. Cover and refrigerate for 15 minutes to allow the flavors to infuse.

  3. Prepare the Flour Mixture: In a bowl, combine the all-purpose flour with the optional chicken bouillon, if using. Mix well to ensure the bouillon is evenly distributed throughout the flour.

  4. Coat the Chicken Skins: After 15 minutes, remove the seasoned chicken skins from the refrigerator. Dredge each piece individually in the flour mixture, pressing down lightly to ensure the flour adheres well.
