Crispy Garlic Grouper with Oats by Alia

Ingredients:

  • 1 kg grouper fish, cut into small pieces
  • 5 cloves garlic, minced
  • 1 stalk green onion, finely sliced
  • 1 curly chili pepper, deseeded and coarsely chopped
  • 3 red bird’s eye chilies, finely chopped (optional, can be omitted)
  • 2 tablespoons Quaker Oats
  • Cooking oil, as needed
  • 1 tablespoon all-purpose flour
  • 3 tablespoons cornstarch
  • Salt, to taste
  • Black pepper, to taste
  • Juice of 1 lime

Instructions:

  1. Prepare the Fish:

    • Clean the grouper pieces thoroughly. Soak them in lime juice for 10 minutes, then rinse with clean water. Pat dry with paper towels.
  2. Prepare the Coating:

    • In a bowl, combine all-purpose flour, cornstarch, salt, and black pepper. Toss the grouper pieces in the flour mixture until well-coated. Let it sit for a few minutes.
  3. Fry the Garlic:

    • Heat a small amount of oil in a pan. Add half of the minced garlic and sauté until golden brown. Remove from the pan and set aside.
  4. Fry the Fish:

    • In the same pan, heat more oil. Once hot, add the coated grouper pieces and fry until golden and crispy. Remove and drain on paper towels.
  5. Prepare the Oat Mixture:

    • Heat a little oil in a pan. Add the remaining minced garlic and sauté briefly. Add the chopped chili peppers and green onion, and stir-fry for a minute.
    • Stir in the oats, mixing thoroughly (add more oil if the mixture seems too dry).
  6. Combine and Serve:

    • Add the fried grouper pieces to the oat mixture. Season with a bit of salt and mix well to combine. Add the fried garlic on top.
    • Turn off the heat and serve immediately.
