Instructions

Step 1: Prepare the Potato Filling

  1. Heat Oil: Begin by heating the oil in a heavy-bottomed pan over medium heat.
  2. Roast Dals & Mustard Seeds: Add the mustard seeds, urad dal, and chana dal. Roast them until they turn golden brown, releasing their aromatic flavor.
  3. Sauté Aromatics: Add the finely chopped ginger, onions, curry leaves, and slit green chilies. Sauté for a few minutes, stirring occasionally, until the onions turn soft and translucent.
  4. Add Potatoes & Spices: Stir in the coarsely mashed boiled potatoes, turmeric powder, and salt. Mix well to ensure the spices are evenly incorporated into the potatoes.
  5. Simmer for Flavor: Cover the pan with a lid and reduce the heat to low. Let it simmer for about 2 minutes, allowing the flavors to meld together.
  6. Finish with Coriander: Turn off the heat and stir in the freshly chopped coriander leaves. Your potato filling is now ready to be used in the masala dosa.

Step 2: Make the Dosas
