Heart-Shaped Bites with Goat Cheese and Chives

Ingredients:

Ingredient Quantity
Whole milk 300 ml
All-purpose flour 180 g
Butter 30 g
Fine salt 2 teaspoons
Goat cheese (Caprino) 120 g
Chives 2 stalks
Salt (to taste) q.b.
Black pepper q.b.
Eggs 2
Bread crumbs q.b.
Peanut oil (or vegetable oil) q.b.

Instructions:

  1. Prepare the Dough:
    In a saucepan, pour the whole milk and add the butter and fine salt. Using a wooden spoon, mix vigorously until the butter is fully melted and the ingredients are combined. Allow the mixture to cool slightly.

  2. Form the Dough:
    Once the mixture is warm but not hot, transfer it to a lightly floured work surface. Begin kneading the dough with your hands until smooth and elastic. Let the dough cool completely.

  3. Make the Filling:
    While the dough cools, prepare the filling by mixing the goat cheese, a pinch of salt, black pepper, and finely chopped chives in a bowl. Stir until everything is well combined.

  4. Shape the Heart-Cutouts:
    Roll out the dough with a rolling pin until it’s about 1/8-inch thick. Using a heart-shaped cutter, cut out as many hearts as you can from the dough.

  5. Stuff the Hearts:
    Place a small mound of the goat cheese mixture in the center of each dough heart. Carefully fold the dough over the filling to create a pocket, pressing down the edges to seal it closed.

  6. Coat the Bites:
    Dip each stuffed heart first into the beaten eggs, making sure it is fully coated. Then, roll the heart in breadcrumbs until it’s well covered.

  7. Fry the Hearts:
    Heat a generous amount of peanut oil in a frying pan over medium heat. Fry the stuffed heart-shaped bites until golden brown and crispy on both sides, about 3-4 minutes per side.

  8. Drain and Serve:
    Once fried, transfer the bites onto a paper towel-lined plate to drain any excess oil. Serve them immediately while they are hot and crispy.
