Gurame Sambel Ulek Recipe

Ingredients:

  • 2 gourami fish
  • For the sambel ulek:
    • 1 clove garlic
    • 3 shallots
    • 1 tomato
    • 1 tablespoon petis (sweet soy paste; Madura petis recommended)
    • Salt and seasoning to taste

Instructions:

  1. Prepare the Fish:

    • Clean and pat dry the gourami fish. Heat oil in a frying pan and fry the fish until golden and crispy. Set aside.
  2. Make the Sambel Ulek:

    • In a mortar and pestle or blender, finely grind the garlic, shallots, and tomato into a smooth paste.
  3. Cook the Sambel Ulek:

    • Heat a small amount of oil in a pan over medium heat. Add the ground paste and sauté until fragrant and the oil starts to separate from the paste.
  4. Add Petis:

    • Stir in the petis (sweet soy paste) and continue cooking for another 2-3 minutes, allowing the flavors to meld together. Season with salt and other preferred seasonings to taste.
  5. Combine with Fish:

    • Gently place the fried gourami fish into the pan with the sambel ulek. Toss to coat the fish with the sambel, letting it simmer for a few minutes to absorb the flavors.
  6. Adjust Seasoning:

    • Taste and adjust the seasoning if necessary.
  7. Serve:

    • Transfer the fish to a serving plate and spoon the sambel ulek over the top. Serve hot with steamed rice.
