Fried Chicken with Grana Padano Crust (Pollo Fritto al Grana Padano)

Grana Padano DOP (grated) 80g
Light beer 100g
Water 50g

Breadcrumbs 90g
Grana Padano DOP (grated) 70g
Thyme (fresh or dried) To taste
Black pepper To taste

Instructions:

  1. Boil the Chicken:
    Begin by placing a pot of water on the stove and bringing it to a boil. Once the water is boiling, add a pinch of salt and immerse the chicken drumsticks. Let them cook for about 15 minutes. Afterward, remove the drumsticks and allow them to cool completely.

  2. Prepare the Batter:
    While the chicken cools, prepare the batter. In a bowl, combine the all-purpose flour, 80g of grated Grana Padano, the egg, and water. Whisk everything together until you have a smooth and lump-free batter. Cover the bowl with plastic wrap and refrigerate for about 10 minutes to let it set.

  3. Prepare the Breadcrumb Coating:
    In a separate bowl, mix the remaining 70g of grated Grana Padano with the breadcrumbs. Add fresh thyme leaves (or dried thyme) and black pepper to taste. Stir everything well to ensure the ingredients are evenly distributed.

  4. Coat the Chicken:
    Once the chicken has cooled and the batter has rested, dip each drumstick into the batter, ensuring it is completely coated. Then, roll the battered chicken in the breadcrumb mixture, pressing gently to adhere the coating evenly.

  5. Fry the Chicken:
    In a non-stick frying pan, heat a generous amount of peanut oil over medium-high heat. The oil should reach a temperature of 170–175°C (340–350°F). Once the oil is hot, carefully place the coated drumsticks in the pan and fry until golden brown and crispy, turning occasionally to ensure even cooking. Each drumstick should take about 6–8 minutes to fry completely.

  6. Drain and Serve:
    Once the chicken is perfectly crispy, remove it from the oil and let it drain on a paper towel-lined plate to remove excess oil. Serve the crispy, golden Grana Padano-crusted chicken drumsticks immediately, garnished with a sprig of thyme for an added touch of flavor.
