Ingredients

Fine salt to taste
White wine 80ml
Breadcrumbs 50g
Grana Padano DOP (grated) 25g
Extra virgin olive oil to taste
Fresh parsley (chopped) 10g
Garlic (minced) ½ clove

Instructions

  1. Prepare the Shrimp: Begin by cleaning the shrimp. Carefully peel them, keeping the tail intact. Use a small knife to make a shallow incision along the back of each shrimp to remove the dark vein.
  2. Assemble the Shrimp in Shells: Take two shrimp and place them into each shell, ensuring they fill the cavity. Pour approximately one tablespoon of white wine over the shrimp in each shell.
  3. Make the Breadcrumb Mixture: In a bowl, combine the breadcrumbs, freshly chopped parsley, grated Grana Padano cheese, and a pinch of fine salt. Add a drizzle of extra virgin olive oil to the mixture and stir to combine.
  4. Top the Shrimp: Spoon one to two tablespoons of the breadcrumb mixture over each shrimp, making sure the shrimp are well-covered.
  5. Bake: Place the filled shells onto a baking tray lined with parchment paper. Bake in a preheated oven at 180°C (350°F) for about 25 minutes, or until the breadcrumbs are golden and the shrimp are cooked through.
  6. Serve: Once cooked, remove from the oven and allow the gratinated shrimp to cool slightly before serving. Enjoy this flavorful appetizer warm.
