Instructions
- Prepare the Shrimp: Begin by cleaning the shrimp. Carefully peel them, keeping the tail intact. Use a small knife to make a shallow incision along the back of each shrimp to remove the dark vein.
- Assemble the Shrimp in Shells: Take two shrimp and place them into each shell, ensuring they fill the cavity. Pour approximately one tablespoon of white wine over the shrimp in each shell.
- Make the Breadcrumb Mixture: In a bowl, combine the breadcrumbs, freshly chopped parsley, grated Grana Padano cheese, and a pinch of fine salt. Add a drizzle of extra virgin olive oil to the mixture and stir to combine.
- Top the Shrimp: Spoon one to two tablespoons of the breadcrumb mixture over each shrimp, making sure the shrimp are well-covered.
- Bake: Place the filled shells onto a baking tray lined with parchment paper. Bake in a preheated oven at 180°C (350°F) for about 25 minutes, or until the breadcrumbs are golden and the shrimp are cooked through.
- Serve: Once cooked, remove from the oven and allow the gratinated shrimp to cool slightly before serving. Enjoy this flavorful appetizer warm.
