Instructions:

  1. Prepare Fried Shallots:

    • On a large rimmed baking sheet, toss the shallots with 1/3 cup of flour, ensuring they are evenly coated. Shake off any excess flour.

  2. Cook Green Beans:

    • Drain and refresh under cold running water. Pat dry with paper towels.
  3. Prepare Mushroom Sauce:

    • Melt the butter in a large, enameled cast-iron casserole over medium heat.
    • Add the onions and cook, stirring occasionally, until softened, about 5 minutes.
    • Stir in the paprika, cayenne pepper, and a large pinch of pepper. Cook for 1 minute.
    • Add the cremini mushrooms, cover, and cook over moderate heat until softened, about 5 minutes.

    • Stir in the remaining 3 tablespoons of flour and gradually stir in the stock until smooth.
    • Simmer the mushroom sauce over low heat, stirring, until thickened, about 5 minutes.
    • Stir in the creme fraiche, fresh lemon juice, and cooked green beans.
    • Cover and simmer, stirring occasionally, until the beans are heated through, about 5 minutes.
    • Season with salt and pepper to taste.
  4. Bake:

    • Preheat the oven to 400°F (200°C).
    • Transfer the green bean and mushroom mixture to a large glass or ceramic baking dish.
    • Cover the casserole with foil and bake until bubbling, about 20 minutes.
  5. Serve:

    • Uncover the casserole, scatter the fried shallots on top, and serve hot.
