Ingredients:
- 1 cup Wheat Berries/Whole Wheat
- 1 cup Rice
- 1 tablespoon Jowar Seeds
- 1 tablespoon Arhar dal (Split Toor Dal)
- 1 tablespoon Chana dal (Bengal Gram Dal)
- 1 tablespoon White Urad Dal (Split)
- 1 cup Curd (Dahi/Yogurt)
- 1 inch Ginger, grated
- 2 Green Chillies, finely chopped
- 1/4 teaspoon Turmeric powder (Haldi)
- 1/4 teaspoon Asafoetida (Hing)
- Salt, to taste
- Oil, for frying

Roast Grains and Dals:
In a heavy-bottomed pan, dry roast the wheat, rice, jowar, arhar dal, chana dal, and urad dal separately over low to medium heat until they turn light brown. Set them aside to cool. -
Grind Flour:
Grind the roasted grains and dals into a coarse powder using a flour mill. Store the flour in an airtight container to extend its shelf life. -
Prepare the Vada Batter:
In a mixing bowl, combine 1 cup of the prepared roasted flour with turmeric powder, asafoetida, salt, grated ginger, chopped green chilies, and yogurt. Mix thoroughly to form a thick batter. Let the batter sit for 2 hours to allow the flavors to meld. -
Fry the Vadas:
Heat oil in a deep frying pan over medium heat. Once the oil is hot, scoop spoonfuls or shape small rounds of the batter and gently drop them into the hot oil. Fry the vadas until they are crispy and golden brown on all sides. -
Drain Excess Oil:
Use a slotted spoon to transfer the fried vadas onto a plate lined with kitchen towels to absorb excess oil. -
Serve:
Serve the Gujarati Valsadi Vada hot, paired with a spicy Pudina Chutney and a cup of Masala Chai for a delightful tea-time snack.
