Crispy Gurame with Padang Sauce
Ingredients:
- 1 kg gurame fillet, cut into bite-sized pieces
- 1 lime, juiced
- 3 tablespoons all-purpose flour
- 4 tablespoons all-purpose flour (additional)
- 3 tablespoons margarine
- 1 onion, sliced
- 3 shallots, sliced
- 3 cloves garlic, minced
- 3 red curly chilies, sliced
- 3 bird’s eye chilies, sliced
- 1 green onion, chopped
- 1½ tablespoons oyster sauce
- 2 tablespoons tomato sauce
- 4 tablespoons chili sauce
- 100 ml chicken broth or 1 teaspoon Royco chicken seasoning mixed with warm water

Begin by thoroughly rinsing the gurame fillets. Squeeze fresh lime juice over the fish, allowing it to marinate for 10 minutes. Rinse again to remove any excess lime. -
Prepare the Vegetables:
Slice the onion, shallots, red curly chilies, and green onion. Mince the garlic finely to enhance the flavor in the dish. -
Make the Batter:
In a bowl, combine the all-purpose flour with a little water to create a thick batter. Gradually add the batter to the fish fillets, ensuring each piece is evenly coated. Allow the coated fillets to rest for about 5 minutes. -
Coat and Fry:
Transfer the fillets to a plate with the additional flour, ensuring each piece is lightly dusted. Heat oil in a frying pan until hot, then fry the fillets until they are golden and cooked through. Once done, lift them out and place on a plate to drain excess oil. -
Prepare the Padang Sauce:
In a separate pan, melt the margarine over medium heat. Add the sliced onion, shallots, and minced garlic, sautéing until fragrant. Stir in the sliced chilies and green onion, mixing well. Pour in the chicken broth, followed by the oyster sauce, tomato sauce, and chili sauce. Stir continuously until the mixture begins to bubble. -
