Crispy Gurame with Broccoli in Oyster Sauce

Ingredients

For the Fish:

  • 1 whole Gurame fish
  • 2 cups Kobe flour
  • 1 head of broccoli
  • Juice of 2 limes
  • Salt (to taste)

For the Sauce:

  • 5 bird’s eye chilies
  • 3 cloves garlic
  • 3 shallots
  • 1 cm ginger
  • 2 onions
  • 2 packets oyster sauce
  • 1 packet butter
  • Soy sauce (to taste)
  • Ground pepper (to taste)
  • Salt (to taste)
  • Seasoning (such as Royco chicken seasoning)
  • Water (adjust as needed)

Instructions

  1. Prepare the Fish: Start by cleaning the Gurame fish thoroughly, removing any dirt and scales. Carefully fillet the fish to separate the flesh from the bones. After filleting, rub the fish with salt and the juice of 2 limes, then let it sit for a few minutes to absorb the flavors.

  2. Prepare the Sauce Ingredients: While the fish is marinating, gather the ingredients for the sauce. Thinly slice the shallots, garlic, ginger, and onions, and set them aside.

  3. Coat and Fry the Fish: For frying, prepare the Kobe flour according to the instructions on the packaging. Once ready, heat enough oil in a pan for deep frying. Coat the fish in the flour and fry it in hot oil until golden brown and crispy. Remove the fish from the oil and let it drain on paper towels.

  4. Make the Sauce: In a separate pan, heat a little oil and sauté all the sliced sauce ingredients until fragrant. Add the packet of butter, stirring until melted, followed by the oyster sauce. Mix well.

  5. Combine with Broccoli: Once the sauce is bubbling, add water to reach your desired consistency. Incorporate the broccoli and stir until it thickens slightly.

  6. Serve: Once the sauce is cooked through, pour it generously over the crispy fried fish. Serve hot, garnished as desired.
