Ingredients

  • 1 whole Gurame fish
  • 6 tablespoons tauco (fermented soybean paste)

    • 4 cloves garlic
    • 1 red curly chili
    • 6 bird’s eye chilies
    • 2 green chilies
    • 1/2 red tomato
    • 2 green tomatoes

Preparation Steps

  1. Fish Fillet Preparation:

    • Fillet the fish without completely separating the flesh from the bones.
    • Rinse the fish thoroughly and soak it in lime juice for about 10 minutes to eliminate any fishy odor.
    • Rinse the fish again and pat it dry with a paper towel.
  2. Frying the Fish:

    • Heat a generous amount of oil in a deep frying pan. The oil should be enough to completely submerge the fish to ensure even frying.
    • Fry the fish until it turns golden brown and crispy. Remove from the oil and drain on paper towels to get rid of excess oil.
  3. Preparing the Tauco Sauce:

    • In a separate pan, heat a small amount of oil and sauté all the sliced spices (ginger, shallots, garlic, red curly chili, bird’s eye chilies, green chilies, red tomato, and green tomatoes) until fragrant and slightly softened.
    • Add the tauco to the pan, stirring well to combine with the sautéed spices. Pour in some water to create a sauce.
    • Dissolve the cornstarch in a small amount of water and add it to the pan. Stir quickly to thicken the sauce. Adjust the thickness by adding more water or cornstarch as needed.
    • Taste and adjust seasoning if necessary. Note that tauco is naturally salty, so additional salt may not be needed.
  4. Serving:

    • Place the fried fish on a large serving platter.
    • Pour the thickened tauco sauce generously over the fish, ensuring it is well-coated with the rich, savory sauce.
    • Serve immediately, garnished with fresh herbs or additional sliced chilies for an extra kick.
