Instructions

  1. Prepare the Fish:

    • Clean the Gurame fish thoroughly and fillet it. Once cleaned, drain any excess water.
    • Marinate the fish by rubbing it with lime juice, salt, and ground black pepper. Make sure the fish is evenly coated. Set aside for about 15-20 minutes to allow the flavors to meld.
  2. Make the Crispy Batter:

    • In a separate bowl, whisk the egg white until slightly frothy.
    • Dip the marinated fish fillets into the egg white, ensuring they are well-coated.
    • Combine the all-purpose flour and sago flour in another bowl, then coat the egg-dipped fish in this flour mixture. Shake off any excess flour for an even crisp.
  3. Fry the Fish:

    • Heat a generous amount of oil in a deep frying pan over medium heat. Ensure the oil is hot enough for frying.
    • Carefully place the coated fish into the hot oil and fry until golden brown and crispy, about 5-7 minutes per side. Adjust the heat as necessary to avoid burning.
    • Once cooked, remove the fish from the oil and drain on paper towels to absorb excess oil.
  4. Prepare the Sweet and Sour Sauce:

    • In a pan, heat some oil and sauté the finely chopped garlic and crushed ginger until fragrant.
    • Add the sliced chili, cucumber, tomato, and diced pineapple, stirring well to combine.
    • Pour in the lime juice, add salt and sugar, and stir to blend all the flavors.
    • In a separate bowl, mix the all-purpose flour and tapioca flour with a little water to form a slurry. Gradually add this mixture to the sauce, stirring continuously until the sauce thickens and becomes glossy.
  5. Serve:

    • Place the crispy fish on a serving platter and generously drizzle the sweet and sour sauce over the top.
    • This dish is best served hot, accompanied by steamed rice or your favorite side dishes. Enjoy the delightful flavors with your loved ones!

With its crispy texture and tangy sauce, this Crispy Gurame Fish with Sweet and Sour Sauce is sure to impress at any dining table, celebrating the joys of cooking and sharing meals with family.
