Ingredients

Ingredients Quantity
Gurame fish 500 grams (4 pieces)
Lime 2 pieces
Carrots, cut into matchsticks 250 grams
Green beans, chopped 250 grams
All-purpose flour 15 tablespoons
Cornstarch 3 tablespoons
Eggs 2 pieces
Whole black pepper, crushed 1 tablespoon
Oyster sauce 1 sachet
Sweet soy sauce 1 tablespoon
Salt and sugar To taste
Cornstarch, mixed with water 2 tablespoons
Onion (for sauce) 3 pieces
Garlic, coarsely chopped 4 cloves
For spice blend:
Garlic 6 cloves
White pepper 1 tablespoon
Salt To taste

Instructions

  1. Marinate the Fish:

    • Begin by cleaning the gurame fish thoroughly and then rub the fish with lime juice. Let it rest for about 30 minutes to eliminate any fishy odor. After this, rinse the fish under cold water and drain well.
    • Next, coat the fish with the spice blend made from 6 cloves of garlic, 1 tablespoon of white pepper, and salt to taste. Allow the fish to marinate in the refrigerator overnight for the best flavor infusion.
  2. Prepare the Breading:

    • Remove the marinated fish from the refrigerator and crack 2 eggs into a mixing bowl. Stir to combine.
    • In a separate bowl, mix the all-purpose flour and cornstarch. Take the marinated fish and coat it in the egg mixture, then dredge it in the flour-cornstarch mixture, pressing down gently to ensure an even coating.
  3. Fry the Fish:

    • Heat a generous amount of oil in a frying pan over low heat. Once the oil is hot, carefully add the coated fish and fry until golden brown and cooked through, approximately 5-7 minutes on each side. Remove the fish from the pan and let it drain on paper towels.
  4. Blanch the Vegetables:

    • Bring a pot of water to a boil and add the chopped carrots and green beans. Blanch the vegetables for about 3 minutes, then drain and immediately rinse with cold water to stop the cooking process. Set aside.
  5. Prepare the Black Pepper Sauce:

    • In a separate pan, sauté half of a finely chopped onion and the coarsely chopped garlic until fragrant and translucent. Add water to the pan according to your taste preferences.
    • Stir in the oyster sauce, sweet soy sauce, salt, and sugar. Taste and adjust the seasoning as needed. Allow the sauce to come to a simmer.
    • Slowly add the cornstarch-water mixture to the sauce, stirring continuously until the sauce thickens. Remove from heat and set aside.
  6. Make the Onion Rings:

    • Slice the remaining onions into rings. Dip them into the leftover egg mixture from the fish, then coat them in the flour-cornstarch mixture.
    • Fry the onion rings in hot oil until golden and crispy, then drain on paper towels.
  7. Assemble the Dish:

    • Arrange the blanched vegetables on a serving plate, followed by the crispy fried gurame fish and onion rings.
    • Generously drizzle the black pepper sauce over the fish and vegetables.
  8. Serve and Enjoy:

    • Your Steak Gurame with Black Pepper Sauce and Onion Rings is ready to be served. This delightful dish pairs wonderfully with steamed rice or can be enjoyed on its own as a rich, flavorful meal.
