Ingredients

Main Ingredients Quantity
Fresh Gurami fish (filleted) 1 kg
Garlic (minced) 2 cloves
Black pepper A pinch
Lime (juice) 1/2
All-purpose flour Enough for dredging
Sweet and sour spicy sauce
Garlic (minced) 2 cloves
Red onions (chopped) 3 cloves
Onion (sliced) 1/2
Thai bird’s eye chili (sliced) 7 pieces
Tomato (chopped) 1/2
Tomato ketchup 3 tablespoons
Chili sauce 2 tablespoons
Cornstarch (for thickening) To taste
Vegetables
Carrot (julienned) 1 piece
Tomato (chopped) 1 piece
Cucumber (sliced) 1/2 piece
Leeks (sliced) 1 stalk

Instructions

  1. Prepare the Fish:

    • Begin by filleting the fresh Gurami fish and rubbing it with a mix of salt, pepper, lime juice, and minced garlic. Let the fish marinate for about 15 minutes to absorb the flavors.
    • Once the marination is complete, dredge the fish fillets in all-purpose flour, pressing gently to ensure the flour sticks evenly.
    • Heat oil in a pan and fry the fish fillets until golden and crispy. Once done, drain the excess oil and set the fish aside.
  2. Prepare the Vegetables:

    • While the fish is frying, prepare your vegetables. Slice the carrot into thin matchstick-sized pieces, chop the tomato and cucumber, and slice the leeks. Set them aside.
  3. Make the Sweet and Sour Spicy Sauce:

    • In a separate pan, heat about 3 tablespoons of oil and sauté the minced garlic and red onions until fragrant.
    • Add the sliced onion, bird’s eye chili, and stir-fry until the onions become soft and aromatic.
    • Stir in the chopped tomato, tomato ketchup, and chili sauce, followed by a pinch of salt and sugar for balance. Mix well.
    • Once the sauce has begun to thicken slightly, add the vegetables, such as carrots, cucumber, and leeks. Stir everything together and allow it to cook for a few more minutes until the vegetables are slightly tender but still have a bit of crunch.
    • In a small bowl, dissolve cornstarch in a little water and slowly pour it into the sauce while stirring. This will help thicken the sauce to your desired consistency.
  4. Combine the Fish with the Sauce:

    • Gently place the crispy Gurami fillets into the sweet and sour spicy sauce, ensuring the fish is well coated with the flavorful sauce. Toss it gently to mix the fish with the sauce.
  5. Serve:

    • Once the fish is well-coated with the sauce, transfer the dish to a serving plate and garnish with fresh vegetables.
    • Serve immediately and enjoy the balance of spicy, sweet, and tangy flavors with every bite!
