Instructions

  1. Prep the ingredients:
    Start by finely chopping the yellow onion.
    Cut the prosciutto crudo into thin strips or small pieces to prepare it for the croquette mixture.

  2. Cook the filling:
    In a saucepan, melt the butter over medium heat. Add the chopped onion and sauté until soft and translucent, about 3-4 minutes.
    Once the onion is tender, add the prosciutto crudo to the pan and toast it for around 2 minutes, allowing the flavors to meld together.

  3. Make the béchamel-like mixture:
    Gradually pour in the milk in three separate batches, stirring constantly to avoid lumps. Continue stirring for at least 6 minutes until the mixture thickens to a dense consistency, similar to a thick béchamel sauce.

  4. Chill the mixture:
    Once the mixture has thickened, transfer it to a baking dish or tray and let it cool at room temperature. Once cooled, place it in the refrigerator for at least 2 hours to firm up.

  5. Shape the croquettes:
    After chilling, remove the mixture from the fridge and transfer it onto a clean cutting board. Using a knife, cut the mixture into 10 equal rectangles.
    Shape each rectangle into a croquette by gently molding them with dampened hands.

  6. Coat the croquettes:
    Beat the eggs in a shallow bowl. In a separate bowl, place the breadcrumbs.
    Dip each croquette into the beaten eggs first, ensuring it’s fully coated, then roll it in the breadcrumbs to create a crisp outer layer. Place the breaded croquettes on a tray as you finish coating them.

  7. Fry the croquettes:
    Heat sunflower oil in a deep frying pan or pot, bringing the temperature up to 170°C (340°F).
    Carefully drop in the croquettes, frying them in small batches (2 at a time). Fry each batch for about 3 minutes, or until golden brown and crisp on all sides.
    Once cooked, remove the croquettes from the oil and drain them on a paper towel.

  8. Serve:
