Crispy Salmon on Crusty Bread

Ingredients

Salmon fillet 120g
Homemade bread 20g
Lemon zest ½
Parsley 10g
Mint 1 sprig
Thyme 4 sprigs
Oregano 4 sprigs
Extra virgin olive oil 2 tbsp
Black pepper to taste
Salt to taste

Instructions

  1. Begin by preparing the bread. Cut it into small cubes. Place the bread cubes in a food processor.
  2. Add the chopped parsley, zest of half a lemon, thyme, and oregano to the processor. Season with salt and pepper according to taste.
  3. Pulse the mixture to coarsely chop, making sure it doesn’t become too fine. Transfer it to a bowl.
  4. Now, focus on the salmon. Pat the fillets dry with paper towels. Cut the fillet into 12 pieces, each roughly the same size as the bread cubes.
  5. Coat the salmon slices in the breadcrumb mixture, pressing it gently to make sure the breading sticks well to all sides of the fish.
  6. Place the breaded salmon on a baking sheet lined with parchment paper.
  7. Bake in a preheated oven at 190°C (375°F) for 10 minutes if using static mode, or 160°C (320°F) for 10 minutes if using fan mode.
  8. Once the salmon is cooked and golden brown, remove it from the oven. Serve it hot on the crunchy bread bites, garnished with fresh mint leaves for a refreshing finish.
