Crispy Salmon on Crusty Bread

| Homemade bread | 20g | 
| Lemon zest | ½ | 
| Parsley | 10g | 
| Mint | 1 sprig | 
| Thyme | 4 sprigs | 
| Oregano | 4 sprigs | 
| Extra virgin olive oil | 2 tbsp | 
| Black pepper | to taste | 
| Salt | to taste | 
Instructions
- Begin by preparing the bread. Cut it into small cubes. Place the bread cubes in a food processor.
- Add the chopped parsley, zest of half a lemon, thyme, and oregano to the processor. Season with salt and pepper according to taste.
- Pulse the mixture to coarsely chop, making sure it doesn’t become too fine. Transfer it to a bowl.
- Now, focus on the salmon. Pat the fillets dry with paper towels. Cut the fillet into 12 pieces, each roughly the same size as the bread cubes.
- Coat the salmon slices in the breadcrumb mixture, pressing it gently to make sure the breading sticks well to all sides of the fish.
- Place the breaded salmon on a baking sheet lined with parchment paper.
- Bake in a preheated oven at 190°C (375°F) for 10 minutes if using static mode, or 160°C (320°F) for 10 minutes if using fan mode.
- Once the salmon is cooked and golden brown, remove it from the oven. Serve it hot on the crunchy bread bites, garnished with fresh mint leaves for a refreshing finish.
