Instructions
To prepare these Sandy Potatoes, start by peeling the potatoes and cutting them into wedges. Next, tear the bread into small pieces and finely chop the fresh rosemary, sage, and garlic clove. Once the potatoes are cut, place them into a colander and rinse them under cold water to remove excess starch, which will help achieve a crispier texture when baking.
In a mixing bowl, combine the crumbled bread, finely chopped herbs, and the crushed garlic. Add a drizzle of extra virgin olive oil to the mixture, just enough to lightly coat the breadcrumbs and herbs. Season the potatoes with salt and black pepper, then add the bread and herb mixture, tossing everything together until the potatoes are well coated.
Transfer the potatoes to a baking sheet, spreading them out evenly. For best results, cook them in a static oven at 180°C (350°F) for 40 minutes. If using a fan-assisted oven, reduce the temperature to 160°C (320°F) and bake for 30 minutes. Once the potatoes have baked through and developed a golden color, switch the oven to grill mode for an additional 5 minutes to achieve that perfect crispiness on top.
