Homemade Chicken Nuggets
Ingredients:
- 1/4 kg chicken fillet, meat only, finely chopped
- 1 carrot, grated
- 1 stalk spring onion (scallion), finely chopped
- 4 cloves garlic
- 8 shallots
- 1 tsp ground pepper
- 1/2 kg tapioca flour
- 2 eggs
- Salt and seasoning to taste
- Bread crumbs or panko bread crumbs
Instructions:

Prepare the Chicken: Wash the chicken thoroughly and cut into small pieces. Place the chicken in a blender.

Blend the Chicken Mixture: Add 1 egg, garlic, shallots, ground pepper, and a little water to the blender. Blend until smooth.

Prepare the Vegetables: Grate the carrot and finely chop the spring onion.

Combine Ingredients: Transfer the blended chicken mixture into a mixing bowl. Add grated carrot, chopped spring onion, and tapioca flour (start with 10 tbsp and add more if needed for desired consistency).

Season and Mix: Stir the mixture well until everything is evenly combined. Season with salt and seasoning to taste.

Prepare for Steaming: Grease a container with butter or oil. Pour the chicken mixture into the container.

Steam the Mixture: Steam in a steamer for 30-40 minutes or until cooked through.

Cool and Cut: Once cooked, remove from the steamer and let it cool. Cut into small pieces.

Coat and Fry: Prepare a bowl with the remaining egg (beaten) and another bowl with bread crumbs. Dip each piece of chicken mixture into the beaten egg, then coat with bread crumbs.

Fry the Nuggets: Heat oil in a frying pan over medium heat. Fry the nuggets until golden brown and crispy.
