Savory Chicken Nuggets

Ingredients

  • 250 grams chicken breast (use the meat)
  • 3 cloves garlic
  • 1 shallot
  • 1 teaspoon flavor enhancer (Sasa/Masako/Royco)
  • Salt to taste
  • 3 tablespoons tapioca flour
  • 2 tablespoons all-purpose flour
  • 1 tablespoon cornstarch
  • 2 eggs

Coating

  • 3 tablespoons rice flour or all-purpose flour
  • Water as needed
  • Breadcrumbs as needed

Instructions

  1. Prepare the Chicken Mixture:

    • Blend the chicken breast in a food processor until it becomes a smooth paste.
    • Blend the garlic, shallot, salt, and flavor enhancer together until smooth.
    • In a large mixing bowl, combine the blended chicken, blended garlic mixture, eggs, tapioca flour, all-purpose flour, and cornstarch.
    • Add a small amount of ice water or cold water to the mixture to help it blend evenly until smooth.
  2. Steam the Nuggets:

    • Pour the chicken mixture into a greased steaming tray or mold.
    • Steam the mixture for about 25 minutes until it is fully cooked through.
    • Allow the steamed chicken mixture to cool completely before cutting.
  3. Coat the Nuggets:

    • Cut the cooled chicken mixture into nugget-sized pieces.
    • In a small bowl, mix the rice flour (or all-purpose flour) with enough water to create a thin batter.
    • Dip each nugget into the batter, ensuring it is fully coated.
    • Press each battered nugget into breadcrumbs, pressing lightly to ensure the breadcrumbs adhere to the nugget.
  4. Cook the Nuggets:

    • At this point, the nuggets can be fried immediately or stored in the freezer for later use.
    • To fry, heat oil in a frying pan over medium-high heat.
    • Fry the nuggets until golden brown and crispy on all sides.

These savory chicken nuggets are perfect for a quick snack, a party appetizer, or even a main course. They can be served with a variety of dipping sauces such as ketchup, barbecue sauce, or a tangy mustard dip.

Storage
