Homemade Crispy Chicken (Ayam Krispi Ala Rumahan)

Ingredients:

  • 4 pieces of chicken
  • ½ cup all-purpose flour
  • 2 tablespoons tapioca flour
  • 4 tablespoons rice flour (Rosbrand)
  • 1 tablespoon Masako seasoning (or chicken bouillon powder)
  • 1 egg
  • Oil for frying

For the Marinade:

  • 2 cloves garlic
  • Fresh ginger and turmeric (a small piece each)
  • Salt to taste

Instructions:

  1. Prepare the Chicken: Begin by boiling the chicken pieces with a paste made from garlic, ginger, turmeric, and salt until the chicken is tender. Allow the chicken to cool completely.

  2. Prepare the Breading Mixture: In a large bowl, combine the all-purpose flour, tapioca flour, rice flour, and Masako seasoning. Mix well.

  3. Prepare the Wet Batter: In a separate bowl, beat the egg and mix it with a bit of cold water. Take a portion of the combined flour mixture and mix it with the egg mixture to create a wet batter.

  4. Coat the Chicken: Dip each piece of chicken into the wet batter, then coat it with the remaining dry flour mixture. Gently press the flour mixture onto the chicken to create a crispy coating. Set aside and repeat the process until all chicken pieces are coated.

  5. Fry the Chicken: Heat oil in a deep pan or fryer over medium heat. Once the oil is hot, carefully add the coated chicken pieces and fry them until golden brown and crispy. Ensure the chicken is cooked through.

  6. Serve: Remove the fried chicken from the oil and drain on paper towels. Serve hot and enjoy your homemade crispy chicken!

Tips: For extra crunch, you can double coat the chicken by repeating the dipping process. Serve with your favorite dipping sauces for a delicious meal.
