To begin preparing your homemade tortilla chips, start by making the dough. In a large mixing bowl, combine the yellow cornmeal with water. Knead the mixture until it forms a smooth, uniform dough. Once the dough is ready, transfer it to a clean, flat surface, and work it into a smooth ball. Cover it with plastic wrap and allow it to rest for approximately 30 minutes.
Once rested, divide the dough into six equal portions. Place each portion of dough between two sheets of parchment paper and flatten it gently with your hands. Using an 18 cm (7-inch) ring mold, cut out perfect tortilla shapes from the dough. Alternatively, you can use a lid, a pasta wheel, or even a tortilla press for this task. Collect the dough scraps, rework them, and continue this process until all the dough has been used.
Next, cut each tortilla into halves, then into quarters to create small triangle-shaped pieces.
For the frying step, heat the peanut oil in a large pot or deep fryer to 180Β°C (350Β°F). You can measure the oil temperature with a kitchen thermometer to ensure itβs at the right heat. Fry the tortilla pieces in small batches, taking care not to overcrowd the pot. Allow them to fry for about two minutes on one side, then use tongs or a slotted spoon to flip the chips and fry for a few more seconds until golden brown and crispy.
Once cooked, remove the chips from the hot oil using a slotted spoon and drain on paper towels to remove excess oil. Sprinkle with a pinch of fine salt while still hot for the best flavor.
