Instructions:
To prepare these delicious and crispy vegetable chips, start by slicing the pumpkin into wedges. Carefully peel the skin off using a sharp knife. Next, peel the beets and slice them thinly using a mandolin slicer for that perfect thinness. Finally, peel the potatoes and slice them as well.
Once all the vegetables are prepped, take a baking tray and line it with parchment paper. Arrange the beet slices on the tray, drizzle them with olive oil, sprinkle a pinch of salt, and season with rosemary sprigs for added flavor. Bake the beet chips in a fan-assisted oven at 220°C (428°F) for approximately 20 minutes, or until they become crisp and dry. If using a conventional oven, set it to 230°C (446°F) and bake for 40 minutes. Once the chips are done, remove them from the oven and set aside.
Proceed with the pumpkin chips next. Spread the pumpkin slices on a separate baking tray lined with parchment paper, drizzle with olive oil, season with salt, and add a few rosemary sprigs. Bake in a fan-assisted oven at 220°C (428°F) for 10 minutes, or at 230°C (446°F) in a conventional oven for about 40 minutes. The pumpkin chips should be golden and crispy when done. Remove from the oven and place them on a cooling rack until they are fully crisp and cool.
Finally, prepare the potato chips. Arrange the potato slices on another baking tray lined with parchment paper. Drizzle with olive oil, sprinkle salt, and bake in a fan-assisted oven at 220°C (428°F) for 10 minutes, or in a conventional oven at 230°C (446°F) for 15 minutes. When ready, the potato chips will be golden and crispy. Take them out of the oven and let them cool.
