Crispy Honey Glazed Chicken Stir-Fry

Sweet Honey Chicken (Ayam Saus Madu)

Ingredients:

  • 500 grams chicken, cut into pieces
  • 200 grams all-purpose flour
  • 40 grams cornstarch
  • 2 cloves garlic
  • Water, as needed
  • For Stir-Frying:
    • 1 large onion
    • 2 cloves garlic
    • 1 red bell pepper
    • 4 green chilies
    • 3 tablespoons honey
    • 2 tablespoons oyster sauce
    • Salt, to taste
    • Black pepper, to taste

Instructions:

  1. Prepare the Chicken:

    • Begin by cutting the chicken into bite-sized pieces. Place the chicken in a pot and cover with water. Bring to a boil and simmer until the chicken is half-cooked and any excess fat has been released. Drain and set aside.
  2. Coat the Chicken:

    • Prepare two bowls for coating the chicken. In the first bowl, mix together the all-purpose flour and cornstarch. This will be your dry coating mix.
    • In the second bowl, add a small amount of water to the flour mixture to create a batter. Crush and finely chop the garlic, then mix it into the batter.
  3. Bread the Chicken:

    • Dip each piece of chicken into the batter, allowing any excess to drip off. Then, coat the chicken thoroughly with the dry flour mixture, pressing down gently to ensure the coating sticks well.
  4. Fry the Chicken:

    • Heat oil in a deep pan or fryer until it reaches a temperature of around 180°C (350°F). Carefully add the coated chicken pieces to the hot oil, frying in batches if necessary. Fry until golden brown and crispy. Remove the chicken from the oil and drain on paper towels.
  5. Prepare the Sauce:

    • Slice the large onion and chop the garlic. Dice the red bell pepper and slice the green chilies.
    • In a wok or large skillet, heat a small amount of oil over medium heat. Add the sliced onion and cook until it becomes translucent. Add the garlic and cook until fragrant and golden brown.
  6. Combine Ingredients:

    • Add the diced red bell pepper and sliced green chilies to the pan. Stir-fry for a few minutes until the vegetables are tender.
    • Return the fried chicken pieces to the pan. Pour in the honey and oyster sauce, then season with salt and black pepper to taste. Stir well to coat the chicken and vegetables with the sauce.
  7. Finish and Serve:

    • Continue to stir-fry until the sauce is well-mixed and has slightly thickened. Remove from heat.
    • Serve the sweet honey chicken hot, garnished with additional chopped herbs if desired.
