Hong Kong Chicken Salad Recipe

Overview:

This Hong Kong Chicken Salad is not only a feast for the taste buds but also a treat for the eyes with its beautiful presentation. Perfect for using up leftover baked chicken breasts or poached chicken, this salad combines crispy textures and savory flavors with a touch of Asian-inspired zest.

  • Preparation Time: 20 minutes
  • Cooking Time: 10 minutes
  • Total Time: 30 minutes
  • Serves: 8

Ingredients:

  • 4 chicken breasts, cooked and shredded
  • 2 bundles cellophane noodles
  • 3 3/4 ounces wonton wrappers, sliced into strips
  • 11 ounces iceberg lettuce, shredded
  • 1 green onion, thinly sliced
  • 1 bunch parsley, chopped
  • 1 teaspoon dry mustard
  • 1/2 cup soy sauce
  • 6 tablespoons sesame oil
  • 3/4 cup vegetable oil, for frying

Instructions:

  1. Prepare the Marinade:
In a small bowl, combine dry mustard with sesame oil, stirring until smooth. Add soy sauce and mix thoroughly. Reserve 1 cup of this marinade for later use and set aside the rest.

  2. Marinate the Chicken:
Cut the cooked chicken breasts into bite-size pieces and place them in the reserved 1 cup of marinade. Allow the chicken to marinate while you prepare the other ingredients.

  3. Prepare the Cellophane Noodles:
Heat vegetable oil in a deep pan or wok to 350ยฐF (175ยฐC). Carefully drop the cellophane noodles into the hot oil in small batches. They will puff up quickly (referred to as “exploding”), so remove them promptly with a slotted spoon when they are crispy. Drain on paper towels and set aside.

  4. Prepare the Wonton Strips:
In the same oil, fry the wonton strips in batches until they are lightly browned and crispy. Drain on paper towels and set aside.

  5. Assemble the Salad:
On a large serving platter, arrange the shredded iceberg lettuce as the base. Layer the crispy wonton strips over the lettuce, followed by the crispy cellophane noodles.

  6. Add the Marinated Chicken:
Arrange the marinated chicken pieces over the noodles. Sprinkle with sliced green onions and nuts.

  7. Serve:
Drizzle the remaining reserved marinade over the salad as a dressing or serve it on the side. Garnish with chopped parsley for freshness and serve immediately to enjoy the crisp textures and vibrant flavors of this Hong Kong Chicken Salad.

This recipe not only showcases the delightful combination of textures and flavors but also ensures a visually appealing dish that will impress your guests. Perfect for a quick and flavorful meal, this Hong Kong Chicken Salad is a must-try for any occasion. Enjoy! ๐Ÿฅ—
