Sayur Ikan Cucut with Tofu Recipe

  • 2 packs of dried fish (ikan cucut)
  • 1 pack of fried tofu skin (contains 10 pieces)
  • 5 shallots
  • 3 cloves of garlic
  • 8 green chilies
  • 5 bird’s eye chilies
  • 1 tomato
  • 1 stalk of lemongrass, smashed
  • 1 thumb-sized piece of ginger, smashed
  • 1 thumb-sized piece of galangal, smashed
  • 1 bay leaf
  • 2 kaffir lime leaves
  • 1 pack of coconut milk (Kara brand)

Instructions:

  1. Prepare the Fish and Tofu:

    • Rinse the dried fish (ikan cucut) thoroughly with warm water to help reduce any strong odor.
    • Cut the tofu skin into bite-sized pieces and fry until golden and crispy. Similarly, fry the rinsed fish until crispy and set both aside.
  2. Prepare the Aromatics:

    • Slice the shallots, garlic, and green chilies. Cut the tomato into wedges.
    • In a large pan or wok, heat some oil over medium heat. Sauté the sliced shallots, garlic, green chilies, and bird’s eye chilies until fragrant and golden brown.
  3. Combine Ingredients:

    • Add the fried fish and tofu to the pan with the sautéed aromatics. Stir gently to ensure the fish and tofu are well-coated with the aromatic mixture.
    • Add the tomato wedges, smashed lemongrass, ginger, and galangal, along with the bay leaf and kaffir lime leaves. Stir to combine.
  4. Add Coconut Milk and Seasonings:

    • Pour in the coconut milk and stir to mix well. Season the dish with sugar, salt, seasoning powder, and a pinch of MSG (optional) to taste.
    • Allow the mixture to simmer, stirring occasionally, until it starts to boil and the flavors meld together.
  5. Final Adjustments:

    • Taste and adjust the seasoning as needed. If desired, add a bit more salt or sugar to balance the flavors.
  6. Serve:

    • Once the dish has reached a gentle boil and the flavors have fully developed, remove it from the heat. Serve hot with steamed rice for a complete meal.
