Ayam Geprek Bensu: Indonesian Crispy Chicken with Spicy Sambal

For the Chicken:
- 1 whole chicken
- Sasa Kentucky seasoned flour
- 1 egg
- Cooking oil for frying

For the Marinade:
- 4 cloves of garlic, minced
- 1 teaspoon white pepper
- 1 teaspoon salt
- A pinch of seasoning (optional: Mgc)

For the Sambal:
- 10 red curly chilies (use milder chilies to make it kid-friendly)
- 4 cloves of garlic
- 1 small tomato
- Salt and sugar to taste
Instructions:
1. Prepare the Chicken:

Clean and Marinate: Start by thoroughly cleaning the chicken and patting it dry. Place the chicken in a large bowl and add the minced garlic, white pepper, salt, and seasoning. Crack an egg into the bowl and mix everything well. To ensure the marinade penetrates deeply, prick the chicken with a fork. Cover the bowl and let it marinate in the refrigerator for about 1 hour. (Do not place it in the freezer.)

Coat and Fry: After marinating, take the chicken out of the refrigerator. Generously coat each piece with the Sasa Kentucky seasoned flour, pressing gently to ensure the flour sticks well. Heat a generous amount of cooking oil in a deep fryer or a large pan. Once the oil is hot, fry the chicken until it turns golden brown and crispy. While frying, occasionally prick the chicken with a fork to ensure it cooks evenly inside. Once cooked, drain the chicken on a paper towel to remove excess oil.

Cook the Sambal Ingredients: In a small pot, bring water to a boil and add the red chilies, garlic cloves, and tomato. Let them cook for a few minutes until they soften. Drain the ingredients and transfer them to a mortar or a food processor.

Grind the Sambal: Roughly grind the cooked ingredients into a coarse paste. If using a mortar, use a pestle and grind until you achieve a chunky consistency. In a pan, heat a small amount of oil and sauté the sambal paste. Season with salt and sugar to taste. Cook until the sambal is fragrant and the raw smell dissipates. Allow the sambal to cool to room temperature.
3. Assemble the Ayam Geprek:
- Combine Chicken and Sambal: Once the sambal has cooled, combine it with the crispy fried chicken. You can either spoon the sambal over the chicken pieces or mix them together in a bowl to coat the chicken evenly.
4. Serve and Enjoy:
- Plate and Serve: Arrange the sambal-coated chicken on a serving plate and garnish with fresh herbs if desired. Serve Ayam Geprek Bensu hot with steamed rice for a complete meal.
