Instructions:

  4. Fry the Chicken:

    • Fry the chicken pieces until they are golden brown and crispy, about 8-10 minutes per side. Adjust the cooking time as needed based on your stove and pan.
  5. Prepare the Sambal:

    • While the chicken is frying, finely chop the shallots, garlic, red chilies, and bird’s eye chilies.
    • Sauté the chopped ingredients in a pan with a bit of oil until they are softened but not too dry.
  6. Combine:

    • Once the sambal ingredients are cooked, use a mortar and pestle or a blender to mash them into a coarse paste.
