Crispy Ayam Geprek: A Flavorful Indonesian Delight

Ingredients:

For the Crispy Chicken:

  • 1 piece of chicken (preferably thigh)
  • 1 egg
  • For the Crispy Coating:
    • 15 grams of all-purpose flour (approximately)
    • ½ teaspoon salt or seasoning
    • ½ teaspoon ground black pepper
    • 1 tablespoon baking powder
    • 1 tablespoon tapioca flour (optional)
    • Water, as needed
  • For the Sambal:
    • 30 bird’s eye chilies (adjust to taste)
    • 3 cloves garlic
    • 2 shallots
    • 1 tomato (optional)
    • Salt, to taste
    • 1 tablespoon sugar

Instructions:

  1. Begin by thoroughly washing the chicken piece, ensuring it is completely dry. Season with salt and pepper, allowing it to rest for a few minutes to absorb the flavors.

  2. Prepare two bowls for the crispy coating. In the first bowl, mix together the flour, salt or seasoning, ground black pepper, baking powder, and tapioca flour (if using). Gradually add water to create a batter that is neither too thick nor too runny. In the second bowl, place a separate portion of the dry coating ingredients.

  3. Dip the seasoned chicken into the wet batter, ensuring it is well-coated. Then, transfer it to the dry coating mixture, making sure it is evenly covered.

  4. Crack and beat the egg in a separate bowl. Dip the coated chicken into the beaten egg, allowing any excess to drip off. Return the chicken to the dry coating mixture, repeating the process to achieve a thicker, crunchier crust.

  5. Heat oil in a frying pan over medium heat. Once the oil is hot, carefully add the coated chicken, making sure it is fully submerged in the oil for even cooking. Fry until the chicken is golden brown and crispy.

  6. For the sambal, combine the chilies, garlic, shallots, and tomato (if using) in a mortar and pestle. Grind the ingredients into a smooth paste, adding salt and sugar to taste.

  7. Once the chicken is crispy and cooked through, remove it from the oil and let it drain on paper towels. Smash the fried chicken with a gentle press and generously top with the freshly made sambal.
