Ingredients

  • 1 fried chicken (whole or pieces)

For the Penyet Sauce:

  • 2 cloves garlic
  • 5 bird’s eye chilies (cabai rawit)
  • 2 cm lesser galangal (cikur)
  • Salt and seasoning (such as Royco) to taste

Steps

  1. Fry the Chicken: Begin by frying the chicken until it is fully cooked and has a crispy, golden exterior. Once done, set it aside to cool slightly.

  2. Prepare the Sauce:

    • While the chicken is frying, start preparing the Penyet sauce.
    • Using a mortar and pestle, finely crush the garlic, bird’s eye chilies, and lesser galangal until a smooth paste forms.

    • Once the chicken is done frying, take about 2 tablespoons of the hot oil used for frying and mix it into the crushed spice paste. This will create a flavorful, aromatic Penyet sauce.
