Empal Goreng Sapi: A Savory Indonesian Beef Delight

Ingredients

  • 500 grams (1/2 kg) beef shank – Cut into bite-sized pieces
  • 3 tablespoons coarse coriander seeds
  • 5 shallots
  • 5 cloves garlic
  • 2 stalks lemongrass – Bruised
  • 3 bay leaves
  • 5 kaffir lime leaves
  • Palm sugar – To taste
  • Salt – To taste
  • Pepper – To taste
  • Seasoning powder – To taste
  • 2 tablespoons sweet soy sauce (kecap manis)
  • Galangal – To taste

Instructions

  1. Prepare the Beef: Cut the beef shank into bite-sized pieces and rinse them thoroughly.

  2. Make the Spice Paste: Blend the shallots and garlic into a smooth paste. Bruise the lemongrass stalks and finely grate or crush the galangal.

  3. Cook the Beef: In a large pot, combine the beef pieces with the blended spice paste, bruised lemongrass, galangal, bay leaves, and kaffir lime leaves. Add enough water to cover the beef and season with salt, pepper, palm sugar, and seasoning powder to taste. Simmer over medium heat until the liquid is reduced and the beef is tender. This usually takes around 45 minutes to an hour.

  4. Fry the Beef: Heat a generous amount of oil in a frying pan over medium-high heat. Once the oil is hot, briefly fry the cooked beef pieces until they are golden brown and crispy on the outside. Be careful not to overcook them; they should be crispy but not too dry. Adjust the frying time according to your preference for doneness.

  5. Serve: Serve the Empal Goreng Sapi hot with steamed rice and your favorite sambal.

Note: If you prefer your beef a bit drier and crispier, you can fry it a little longer. If you like it juicier, just fry until golden brown. The choice is yours!
