Authentic Crispy Beef Meatballs (Bakso Sapi Asli Krenyess Ala Bunda 3D)

Ingredients:

For the Meatballs:

  • 1 kg fresh ground beef (not frozen or previously frozen)
  • 2 tablespoons fried shallots
  • 8 cloves fried garlic
  • 1 teaspoon baking powder
  • 2 teaspoons sugar
  • 4 teaspoons salt
  • 2 teaspoons black pepper
  • 9 tablespoons tapioca flour
  • 2 cold egg whites (straight from the fridge)
  • 4 small ice cubes
  • Instant beef stock powder, to taste

For the Broth:

  • 4 liters water
  • 1/2 kg beef ribs
  • 6 cloves garlic
  • 1 tablespoon fried shallots
  • 3 candlenuts (kemiri)
  • Salt, sugar, and pepper, to taste
  • 2 stalks green onions, finely sliced

Instructions:

  1. Prepare the Meatball Mixture:

    • Place the fresh ground beef and fried shallots and garlic in a food processor. Blend until well combined.
    • Add the baking powder, sugar, salt, black pepper, and tapioca flour to the processor. Blend until the mixture is smooth and cohesive.
    • Finally, add the cold egg whites and ice cubes to the mixture. Blend for an additional few minutes to achieve a smooth, slightly sticky texture. For a finer texture, blend a little longer.
  2. Cook the Meatballs:

    • Bring a large pot of water to a boil. Once boiling, reduce the heat to a simmer.
    • Using a spoon or your hands, shape the meatball mixture into small balls and drop them into the simmering water. Cook until the meatballs float to the surface, indicating they are done. Remove the meatballs from the pot with a slotted spoon and set aside.
  3. Prepare the Broth:

    • In a separate pot, bring 4 liters of water to a boil. Add the beef ribs and cook until tender. This may take 1-2 hours, depending on the size of the ribs.
    • While the ribs are cooking, grind the garlic and candlenuts into a smooth paste. Sauté the paste in a pan until fragrant and golden brown.
    • Add the sautéed paste to the pot with the beef ribs. Season the broth with salt, sugar, and pepper to taste. Continue to simmer until the flavors are well combined.
  4. Final Touches:

    • Once the beef ribs are tender and the broth is flavorful, add the cooked meatballs to the pot. Stir in the finely sliced green onions and let everything simmer together for about 5 minutes.
  5. Serve:

    • Your Bakso Sapi (beef meatballs) is ready to be served! Enjoy the meatballs and broth hot, and consider pairing them with additional garnishes or side dishes of your choice.
  6. Storage:

    • If you have leftovers or wish to prepare in advance, you can store the meatballs and broth separately in the freezer. The meatballs can be kept frozen and reheated as needed, and the broth can also be frozen for future use.
