Capcay Kering with Beef Meatballs
Capcay Kering is a vibrant, savory stir-fry that showcases a delightful combination of vegetables and beef meatballs. This Indonesian-inspired dish, known for its crisp texture and flavorful seasoning, is both satisfying and easy to prepare. Follow these steps to create a delicious meal that’s perfect for any occasion.
Ingredients:
- 5 Carrots, peeled and sliced
- 6 Petai Beans (Puteran), trimmed and sliced
- 1 Head of Cauliflower, cut into florets
- Green Onions, to taste, chopped
- 1 Pack of Beef Meatballs, sliced
For the Spice Paste:
- 5 Shallots, peeled
- 3 Garlic Cloves, peeled
- 1 Candlenut, optional
- Black Pepper, to taste (instant black pepper preferred)
- Salt, to taste
- Sugar, to taste
- Seasoning Powder, to taste
Instructions:

Prepare the Vegetables and Meatballs:
- Clean and cut the carrots into slices according to your preference.
- Slice the petai beans and break the cauliflower into bite-sized florets.
- Chop the green onions.
- Slice the beef meatballs into preferred sizes.

Make the Spice Paste:
- Using a mortar and pestle, grind the shallots, garlic, and candlenut (if using) into a smooth paste. If you don’t have a mortar and pestle, a blender can be used, but the traditional method will yield better flavor.

Cook the Spice Paste:
- Heat a little oil in a pan over medium heat. Add the ground spice paste and sautรฉ until fragrant and the raw aroma dissipates.

Stir-Fry the Vegetables:
- Add a bit of water to the pan with the spice paste. This will help cook the carrots and petai beans.
- Once the carrots and petai beans start to soften, add the cauliflower and beef meatballs. Stir well and cook until the vegetables are tender.

Thicken the Sauce:
- In a small bowl, mix 1 tablespoon of flour with 1/4 cup of water to create a slurry. Pour this mixture into the pan, stirring continuously until the sauce thickens and coats the vegetables and meatballs.

Finish and Serve:
- Once everything is cooked through and well combined, remove from heat.
- Transfer to a serving dish and enjoy your Capcay Kering while hot.
