Sempol Ayam: Indonesian Chicken Skewers Recipe

Ingredients:

  • 250 grams ground chicken
  • 2 tablespoons tapioca flour
  • 2 cloves fried garlic
  • 3 cloves fried shallots
  • Salt to taste
  • Ground black pepper to taste
  • 1 teaspoon chicken bouillon powder
  • 1 large egg
  • 1 stalk green onion, finely chopped
  • 1 stalk celery, finely chopped
  • Oil for frying

For Dipping:

  • 1 large egg, beaten

Instructions:

  1. Begin by finely grinding the fried garlic and fried shallots until they form a smooth paste. Combine this aromatic mixture with the ground chicken in a large mixing bowl. Stir well to integrate the flavors.

  2. Add the tapioca flour, salt, ground black pepper, chicken bouillon powder, and egg to the bowl. Incorporate these ingredients thoroughly into the chicken mixture. Next, fold in the chopped green onion and celery, mixing until evenly distributed. To ensure the seasoning is just right, cook a small spoonful of the mixture in boiling water and adjust the seasoning if necessary.

  3. Lightly grease your hands with oil. Take a portion of the chicken mixture and mold it onto skewers, pressing firmly to ensure it adheres well. Repeat this process until all the mixture has been used.

  4. Boil the skewered chicken in a pot of simmering water for 15-20 minutes, or until fully cooked. Once done, remove the skewers from the water and let them drain and cool slightly.

  5. Dip each skewer into the beaten egg, ensuring it is coated evenly. Heat oil in a frying pan over medium heat. Fry the skewers until they turn golden brown and crispy.

  6. Remove the skewers from the oil and drain on paper towels. Serve your Sempol Ayam warm with a side of sambal sauce for an authentic Indonesian touch.
