Ayam Koloke Recipe: A Delicious Indonesian Chicken Delight

Ingredients:

For the Chicken Marinade:

  • 1/2 kg chicken breast fillets, cut into bite-sized pieces
  • 5 cloves garlic, minced
  • Juice of 1 lime
  • Salt, to taste
  • Ground black pepper, to taste

For the Coating:

  • 3 large eggs
  • All-purpose flour, as needed
  • Vegetable oil, for frying

For the Sauce:

  • 1 large onion, sliced
  • 1 carrot, julienned
  • 2 cloves garlic, smashed and chopped
  • 4 tablespoons tomato ketchup
  • 3 tablespoons chili sauce
  • 1/2 tablespoon oyster sauce
  • 1 cm ginger, smashed
  • 1 tablespoon vegetable oil
  • Sugar, to taste
  • 250 ml water

Instructions:

  1. Prepare the Chicken:

    • Slice the chicken breast fillets into pieces of your desired size, ensuring they are not too thick.
  2. Marinate the Chicken:

    • In a bowl, combine minced garlic, lime juice, salt, and ground black pepper. Rub this mixture all over the chicken pieces. Allow the chicken to marinate for at least 30 minutes to absorb the flavors.
  3. Coat the Chicken:

    • In a separate bowl, beat the eggs lightly. Place some all-purpose flour on a plate.
    • Dip each marinated chicken piece into the beaten eggs, then coat thoroughly with flour. Dip the floured chicken back into the eggs and coat again with flour for a double coating.
    • Heat vegetable oil in a pan over medium heat. Fry the coated chicken pieces in hot oil until golden brown and crispy. Remove and drain on paper towels.
  4. Prepare the Sauce:

    • Heat 1 tablespoon of vegetable oil in a pan over medium heat. Sauté the smashed and chopped garlic until fragrant.
    • Add the sliced onion and cook until it becomes translucent.
    • Stir in the tomato ketchup, chili sauce, oyster sauce, and ginger. Add sugar to taste and gradually add water, stirring constantly to blend the ingredients. Adjust the seasoning as needed.
  5. Combine and Serve:

    • Arrange the fried chicken pieces on a serving plate. Pour the prepared sauce over the chicken.
