  • 1 kg chicken breast, cut into pieces (about 16 pieces)
  • 250 grams Kentucky-style seasoned flour
  • 250 grams all-purpose flour
  • 2 tablespoons tapioca flour
  • 1 teaspoon baking powder
  • Ice cubes
  • Salt, to taste
  • Black pepper, to taste
  • Garlic, minced
  • Optional: flavor enhancer (like bouillon powder)

Instructions:

  1. Prepare the Chicken:

    • Start by cutting the chicken breast into approximately 16 pieces. Wash the chicken pieces thoroughly and pat them dry.
    • Season the chicken with salt, black pepper, and minced garlic. Adjust the amounts to your taste preference.
    • If using, add a flavor enhancer (like bouillon powder) for an extra depth of flavor.
    • Place the seasoned chicken in the refrigerator to marinate for at least 30 minutes. This step helps the flavors to infuse into the meat.
  2. Prepare the Breading Mixture:

    • In a large bowl, combine the Kentucky-style seasoned flour, all-purpose flour, tapioca flour, baking powder, a pinch of salt, and black pepper. Mix thoroughly.
    • In a separate small bowl, mix 3 tablespoons of the flour mixture with enough water to create a thin, slightly runny batter. Add a few ice cubes to keep the batter cold and crispy.
  3. Bread the Chicken:

    • Heat a generous amount of oil in a deep skillet or frying pan over medium heat. The oil should be enough to submerge the chicken pieces.
    • Remove the marinated chicken from the refrigerator.
    • For each piece of chicken, first dredge it in the dry flour mixture, ensuring it is coated evenly.
