Indonesian Fried Chicken with Peanut Sauce (Ayam Goreng Bumbu Kacang)

Ingredients

  • 5 shallots, peeled
  • 3 cloves garlic, peeled
  • 100 grams peanuts, raw

  • 3 green chilies (adjust quantity according to your spice preference, additional red chilies can be added for extra heat)
  • Salt, to taste
  • Sweet soy sauce (such as Kecap Bango), to taste

Instructions

  1. Prepare the Chicken:

    • Start by marinating the chicken pieces with salt and any desired spices. Allow the chicken to marinate for at least 30 minutes.
    • After marination, either deep-fry or pan-fry the chicken until golden brown and crispy. Set aside.
  2. Prepare the Peanut Sauce:

    • Peel and slice the shallots and garlic.
    • Cut the green chilies into rounds, and quarter the tomato.
    • Heat a pan over medium heat and toast the peanuts until they are golden and fragrant. Remove from heat and let them cool.
    • Once cooled, grind the peanuts coarsely using a mortar and pestle or a blender. The texture should be slightly chunky to provide a nice crunch in the sauce.
  3. Cook the Sauce:

    • In the same pan used for toasting peanuts, add a little oil. Sauté the shallots and garlic until they become fragrant and translucent.
    • Add the ground peanuts to the pan, and stir well to combine with the shallots and garlic.
    • Pour in a small amount of water to create a sauce-like consistency. Stir continuously to prevent the sauce from sticking to the pan.
    • Season with salt and sweet soy sauce to taste. Continue cooking until the sauce thickens slightly.
  4. Finish the Sauce:

    • Once the sauce has thickened, add the sliced green chilies and quartered tomato. Cook for an additional minute, just enough for the tomatoes to soften slightly while retaining their shape.
  5. Assemble the Dish:

    • Arrange the fried chicken pieces on a serving plate.
    • Generously spoon the peanut sauce over the chicken, ensuring each piece is well-coated.
  6. Serve and Enjoy:

    • Serve the Ayam Goreng Bumbu Kacang hot, alongside steamed rice or your favorite side dishes.
