Crispy Ayam Goreng Kremes with Spicy Shrimp Paste Sambal

Ingredients:

  • 1/2 kg chicken (I used chicken breast, cut into pieces)
  • 2 bay leaves
  • 2 lemongrass stalks, bruised
  • 4 kaffir lime leaves
  • 500 ml coconut milk (1 packet of coconut milk + water)
  • 500 ml cooking oil (or as needed)

Spice Paste:

  • 6 cloves garlic
  • 5 shallots
  • 1/4 tsp ground coriander
  • 1/4 tsp ground pepper
  • 3 candlenuts
  • 2 segments of turmeric
  • 1 tbsp sugar
  • 1 tsp salt

Kremes Batter:

  • 300 ml chicken broth (strained)
  • 125 g tapioca flour
  • 2 tbsp rice flour
  • 1 egg
  • 1/2 tsp double-acting baking powder
  • Sugar, salt to taste

Spicy Shrimp Paste Sambal:

  • 7 red chilies (adjust to taste)
  • 1 red chili
  • 2 cloves garlic
  • 4 shallots
  • 1 medium tomato
  • Shrimp paste (to taste)
  • Sugar, salt to taste

Instructions:

  1. Prepare the Spice Paste:
    Heat some oil in a pan, sauté the spice paste until fragrant. Add lemongrass, bay leaves, and kaffir lime leaves. Cook until aromatic.

  2. Cook the Chicken:
    Add chicken pieces and coconut milk. Simmer until the chicken is cooked through and the sauce thickens. Set aside.

  3. Prepare the Kremes Batter:
    In a large bowl, mix strained chicken broth with tapioca flour, rice flour, egg, baking powder, sugar, and salt until smooth.

  4. Fry the Chicken with Kremes Batter:
    Heat oil in a frying pan over medium heat. Dip each chicken piece into the kremes batter, ensuring it’s well coated. Carefully drop into the hot oil, using your fingers to sprinkle the batter over the chicken (shake your fingers as you do so).

  5. Fry until Golden Brown:
    Fry the chicken until crispy and golden brown. Remove and drain on paper towels. Repeat until all chicken pieces are fried with the kremes batter.

  6. Prepare the Spicy Shrimp Paste Sambal:
    Fry red chilies, garlic, shallots, and tomato until cooked (be careful not to burn). Grind into a smooth paste using a mortar and pestle or food processor. Add shrimp paste, sugar, and salt to taste.

  7. Serve:
    Serve the crispy ayam goreng kremes hot with the spicy shrimp paste sambal on the side.
