Crispy Fried Gurami à la Dapureci
Ingredients:
- 1 whole gourami fish, cleaned and descaled
- Sajiku flour (or any all-purpose flour)
- 1 egg
- Cooking oil for frying
- Sambal sauce
- Shallots, sliced
- Bird’s eye chilies
- Tomatoes
- Lime juice
- Sweet soy sauce
Instructions:
- Clean the gourami fish thoroughly, removing scales. Cut it open as shown in the photo.
- Rinse the fish and pat dry. Marinate with lime juice and rinse again with water.
- Coat the fish evenly with beaten egg, then dredge in sajiku flour until fully covered.
- Heat cooking oil over high heat in a frying pan.
- Fry the fish until golden brown and cooked through.
- Serve hot with fresh vegetables (lalapan) and sambal kecap. Sambal kecap is made by mixing sliced shallots, bird’s eye chilies, tomatoes, lime juice, and sweet soy sauce.
