Crispy Indonesian Fried Gurami with Sambal Kecap

Crispy Fried Gurami à la Dapureci

Ingredients:

  • 1 whole gourami fish, cleaned and descaled
  • Sajiku flour (or any all-purpose flour)
  • 1 egg
  • Cooking oil for frying
  • Sambal sauce
  • Shallots, sliced
  • Bird’s eye chilies
  • Tomatoes
  • Lime juice
  • Sweet soy sauce

Instructions:

  1. Clean the gourami fish thoroughly, removing scales. Cut it open as shown in the photo.
  2. Rinse the fish and pat dry. Marinate with lime juice and rinse again with water.
  3. Coat the fish evenly with beaten egg, then dredge in sajiku flour until fully covered.
  4. Heat cooking oil over high heat in a frying pan.
  5. Fry the fish until golden brown and cooked through.
  6. Serve hot with fresh vegetables (lalapan) and sambal kecap. Sambal kecap is made by mixing sliced shallots, bird’s eye chilies, tomatoes, lime juice, and sweet soy sauce.
