Indonesian Crispy Smashed Chicken (Ayam Penyet)
Ingredients:
- 1 whole free-range chicken, cleaned thoroughly
- Juice of 1 lime
- 1 lime, sliced
- Ready-made fried chicken seasoning (available at local markets)
- 2 bay leaves
- 2 kaffir lime leaves
- 1 stalk lemongrass, bruised
- Salt and seasoning powder, to taste
- Cooking oil
Sambal Penyet:
- 20 red bird’s eye chilies
- 5 red chilies
- 2 cloves garlic, minced
- 5 shallots, fried briefly
- Salt, a pinch
- Sugar, a pinch
- Seasoning powder, to taste

Prepare the Chicken: Marinate the chicken with lime juice, then rinse again. Rub the ready-made fried chicken seasoning all over the chicken. Stuff the chicken cavity with bay leaves, kaffir lime leaves, lemongrass, salt, and seasoning powder. Let it marinate for 30 minutes.
