Ayam Goreng Terasi: A Delicious Indonesian Fried Chicken Recipe

Ingredients:

For the Chicken Marinade:

  • 1/2 kg chicken (preferably broiler)
  • 4 cloves garlic
  • 2 pieces of ginger (about 2 inches each)
  • 1 tablespoon shrimp paste (terasi)
  • 1 tablespoon salt
  • 1 teaspoon mushroom stock (optional)

For the Coating:

  • 3 tablespoons tapioca flour
  • 3 tablespoons rice flour
  • 2 tablespoons cornstarch
  • 1 teaspoon black pepper
  • 1 teaspoon baking powder
  • A pinch of salt

Additional Ingredients:

  • Cooking oil for frying
  • Shrimp paste chili sauce and fresh vegetables for serving

Instructions:

  1. Prepare the Chicken:

    • Cut the chicken into pieces as desired and make small incisions on each piece to ensure even marination and cooking.
  2. Marinate the Chicken:

    • In a blender or food processor, combine the garlic, ginger, shrimp paste, salt, and mushroom stock to create a smooth marinade.
    • Rub the marinade evenly over the chicken pieces, making sure each piece is well-coated.
    • Transfer the marinated chicken to a bowl, cover with plastic wrap, and refrigerate for at least 3 hours to allow the flavors to infuse.
  3. Prepare the Coating:

    • In a mixing bowl, combine the tapioca flour, rice flour, cornstarch, black pepper, baking powder, and a pinch of salt.
    • Mix well until all the ingredients are evenly distributed.
  4. Coat the Chicken:

    • Place the coating mixture in a large container with a tight-fitting lid.
    • Add the marinated chicken pieces to the container, cover, and shake vigorously until all pieces are coated with the flour mixture. For a crispier texture, gently press the coating into the chicken while shaking.
  5. Heat the Oil:

    • Pour enough cooking oil into a frying pan or deep fryer to submerge the chicken pieces. Heat the oil over medium-low heat to ensure even cooking and crispiness.
  6. Fry the Chicken:

    • Carefully add the coated chicken pieces to the hot oil, ensuring not to overcrowd the pan. Fry in batches if necessary.
    • Cook the chicken until the underside is golden brown, then flip and continue to fry until the other side is also golden brown and the chicken is cooked through.
  7. Serve:

    • Remove the fried chicken from the oil and place it on paper towels to drain any excess oil.
    • Serve the Ayam Goreng Terasi with shrimp paste chili sauce and fresh vegetables for a complete meal.
